1 Tbsp. salt
2 c. uncooked grits
1 c. unsalted butter
4 eggs, beaten
2 Tbsp. chopped fresh herbs or 2 tsp. dried dill, sage, thyme or combo
2 c. shredded cheese
6 slices bacon, cooked and crumbled
- Combine 6 cups milk and salt in a large saucepan. Cook over medium-high heat just until milk starts to boil. Gradually whisk in grits and butter. Reduce heat and simmer, uncovered, 20 to 25 minutes or until thick, stirring often.
- Preheat oven to 350. Remove grits from heat; add remaining 2 cups milk, stirring to cool grits mixture. Stir in eggs, herbs, and 1 cup cheese. Pour grits mixture into a lightly greased baking dish. Top with remaining 1 cup cheese. Bake, uncovered, at 350 for 45 minutes or until bubbly. Sprinkle crumbled bacon on top.
