I love baking and I love cookies! Here's another great recipe from a baker and former restaurant owner who was just featured in our local paper.

1 c. shortening
¾ c. brown sugar
½ c. granulated sugar
3 eggs
2 tsp. vanilla
2¾ c. flour
1 tsp. baking powder
1 tsp. baking soda
2 c. chocolate chips
1 c. quick oats
¾ c. chopped pecans
Mix first 3 ingredients, add eggs one-by-one, add vanilla. Add dry ingredients and finish by adding chips, oats, nuts and coconut. Bake at 350°F. for 8-10 minutes. These keep well, mail well and freeze well!
