Red Velvet Sandwich Cookies


Cookies:
1 box red velvet cake mix
1/2 c. butter, softened to room temperature
2 eggs

Filling:
1/2 c. butter, softened to room temperature
1 8 oz. block cream cheese, softened to room temperature
1 lb. box confectioner's sugar
1 tsp. vanilla

Preheat oven to 350. Mix cookie ingredients together until combined. Drop spoonfuls onto cookie sheet and bake about 10-12 minutes. Let cool. For filling, cream butter, cream cheese, and vanilla in a mixer. Gradually add sugar and mix until smooth. Fill cookies to make sandwiches (about 12).
