
1 pkg. SF, FF instant chocolate pudding
1 1/2 c. skim milk
1/2 tsp. mint extract, divided
1 1/2 c. Cool Whip, divided
green food coloring
12 mint Oreo cookies
1 Oreo cookie pie crust
In a plastic bag, crush Oreos. Combine pudding and milk and whisk for 2 minutes. Fold in 3/4 c. Cool Whip and 1/4 tsp. mint extract. Gently fold in 1 c. crushed Oreos. Pour into pie shell. Combine Cool Whip, green food coloring, and 1/4 tsp. mint extract. Pour on top of pudding mixture. Top with remaining Oreo pieces and refrigerate for at least 1 hour before serving.
