Asian Cucumber Salad

I made Skinnytaste's Crock Pot Sesame Honey Chicken this week, and man is it good!  If you haven't tried Gina's recipes, do yourself a favor and check out her website.  I've yet to be disappointed.  I originally served it with brown rice and sugar snap peas, but wanted something different for leftovers.  I looked at a few different Pinterest recipes before coming up with this Asian cucumber salad.  It was a winner and I'll definitely be making it again.

1 English cucumber, sliced thinly
1/4 c. green onion, chopped
2 Tbsp. lite soy sauce
1 Tbsp. rice vinegar
1/2 Tbsp. sesame oil
1/2 packet Splenda
Dash of sriracha
Salt and pepper to taste

I just mixed everything in a bowl and let it marinate.  Good stuff!
