GRITS' Chocolate Chess Pie

1 refrigerated pie crust
1 stick butter
2 (1 oz.) squares unsweetened baking chocolate
1 (5 oz.) can evaporated milk
2 large eggs
1 Tbsp. vanilla
1 1/2 c. granulated sugar
3 Tbsp. all-purpose flour
1/8 tsp. salt

Preheat oven to 350.  Melt butter and chocolate squares in 30 second intervals in the microwave, stirring every interval until smooth.  Whisk evaporated milk, eggs, and vanilla together.  Add chocolate mixture.  Stir together sugar, flour, and salt.  Add to chocolate mixture, whisking until smooth.  Press pie shell into 9 inch pie plate.  Pierce bottom with fork.  Pour filling into pie shell and bake 45-50 minutes.  Let cool 1 hour before serving.  Top with powdered sugar and serve with whipped cream.
