Mexican Caviar


2 cans black eyed peas, drained and rinsed
1 can shoepeg corn, drained and rinsed
1 can Ro-Tel
1 bunch green onions, chopped
1 avocado, chopped
carrots, chopped
celery, chopped
1 pkg. Good Seasons zesty Italian mix
1/2-3/4 c. red wine vinegar
1 lime, juiced
2 Tbsp. olive oil
1/2 bunch cilantro, chopped
salt
pepper

Combine ingredients and refrigerate. Serve with tortilla chips or corn chips.
